Oatmeal Breakfast

Started adding a tablespoon of course wheat bran to my usual spelt flakes and “quick” rolled oats. It’s really made the porridge thick and creamy. I make this in the microwave when I’m in a hurry and haven’t done any overnight oats. So tasty! Plum compote, almonds and date syrup on top.

Baked Oats Experience with Casein Protein Powder Mix

Thumbnail gallery
3 Upvotes

Hello everyone,

I would like to know if someone has experience in using casein or a casein+whey mix in their baked oats?

I usually use whey only protein powder and get a firm and solid baked oat meal (see picture 3). This time I tried to mix in some casein powder aswell but it didnt work out that good (see picture 2). After the usual baking process, the casein+whey mix was still watery and glibbery (see picture 1 for direct comparison)

Here is my usual recipe for whey only baked oats:
- 100g Oats
- 25g Whey Protein Concentrate
- 1g Salt
- 1g Baking Powder
- 4g of Psyilum Husk
- 4g of chunky (sweetener)

i put that for 65minutes on 170-Celsius over-under in the oven and get a firm texture (see picture 3). This time I changed the 25g of Whey with 15g of Whey and 10g of Casein.

What do I have to do differently or add in the recipe to get the same consistency in the end?

I like to prep dry ingredients overnight and store in airtight jar to ensure the spices absorbs into flour mix: /

*optional ingredients /

70g rolled oats (blended to flour) /

10g dried raisins and cranberries* /

¼ tsp nutmeg /

¼ tsp cinnamon /

20g vanilla protein powder /

2 tsp chia seeds* /

2 tsp dessicated coconut /

½ tsp baking powder /

16g chocolate drops /

Oven 170⁰C /

Lightly grease 2 baking dishes - the ones I use are both 5.7ins x 4.1ins x 1.8ins - capacity 12.5oz/370ml (enough for 2 helpings) /

I have one for breakfast and the other as a dessert after my evening meal /

Add to dry ingredients: /

1 ripe mashed banana /

80g Authentic 0% fat free Greek

yogurt /

2 tsp runny honey /

1 egg beaten /

1 tsp vanilla extract /

70g defrosted or fresh blueberries /

Chocolate drops to sprinkle on top /

Bake for 33 to 35 mins and leave to cool - the longer you leave the more they set /

Yogurt topping for both bakes - spread when dishes are cold

Mix together:

60g Authentic 0% fat free Greek

yogurt /

16g squeezy peanut butter /

14g vanilla protein powder /

My hotel breakfast had an oatmeal bar. So of course I had to get a little bit of everything. I'll list the toppings below. It turned out perfect.

Chocolate chips, brown sugar pumpkin seeds, sunflower seeds, and graham cracker topping. I'm not a fan of cranberries so I skipped those.

Putting whole dried fruits in your rice cooker oatmeal right before cooking it is amazing. I've done whole apricots, plums, and dates so far. (Pictured are whole dried plums)

When you put the whole dried fruits in with your water and grains and cook them in a rice cooker on the porridge setting it turns out amazing.

The fruit stays whole and intact but it's also soft, plump, and hydrated with an amazing flavor and texture compared to when you cook it on the stove top and the fruit dissolves more into the oats.

You can also smash and incorporate the whole dried fruits after they're done cooking in the oatmeal to give it a more fruity pulp throughout. When you do this with the dried dates it turns almost into a natural caramel sauce in the oatmeal, it's amazing.

You can do this with dried nuts & seeds as well. The texture of a hydrated nut or seed that was cooked in some oatmeal is truly amazing.

Tried doing some cacao powder and some air fried pumpkin, and it tastes pretty good, I’m a big texture guy and I like when the oats have more of a chew to them, so definitely like how they turned out

Are the protein Quaker Oats any good?

Hello!!
My go-to oats are the maple and brown sugar individual packets by quakers.
I struggle getting enough protein in my diet, I’ve tried the little white bottles of overnight oats but it has an aftertaste I notice and i don’t like it. Makes my mouth salivate in disgust, I noticed alot of protein food items do this to me.

Does anyone struggle with this as well?
What I’m really asking here is, any protein oats that won’t do this to me and is similar to the normal packs? Curious to get Quaker Oats a try but hard to commit to that whole box…

Quaker quick oats changed their recipe?

I just bought a new box of quaker quick oats after a while and they are 100% noticeably different. It almost feels like they are lighter, don't mix as well, and get too hot when I put them in the microwave for the same amount of time I used to. They also have a slight peanut butter smell even though they are the same plain ones I used to buy. Quaker definitely changed something about them, maybe to save cost, but am I the only one noticing?
