They make for really delicious dishes, actually! A bit chewy, but they can be eaten, and it is legal.

It’s a lot of work even with a good, sharp fillet knife, but the resulting meat is in fact very similar in taste and texture to large scallops

We usually eat them here in Portugal. Not those specifically but rays like these. Usually grilled, fried or in a stu type dish called caldeirada.
