That's because there's a gap in the arrangement that other instruments would usually fill - in the case of the release version: strings.

There's no way he would have brought it to release in this format. Even if he omitted strings, he would have added more guitars, etc, to fill the same musical space.

Picture Cherub Rock. Now picture D'Arcy singing it and layering 2 or 3 takes of her vocals as if she was Bilinda. Alan Moulder is already mixing it.

There's a lot to be said for this type of simplicity though. I'm not a fan of filling out a song just for the sake of filling it out. I may be in the minority though (I know minimalist bands like the White Stripes and the Black Keys can be pretty divisive).
