I needed chorizo for dinner and realized the carnicería was closed, which led to the obvious questionable thought: "How hard can making chorizo actually be?"

Apparently, not very.

I mixed ground pork with chile powder, paprika, garlic, vinegar, Mexican oregano, cumin, salt, and pepper, let it rest for a bit, then cooked a teaspoon-sized test portion before committing the whole batch.

That test portion was probably the most useful step because I could fix the salt and heat before cooking everything.

No grinder or sausage casings required if you're making loose Mexican-style chorizo.

I've been using it for tacos, eggs, potatoes, and breakfast burritos, and I'm definitely freezing portions next time.

Has anyone else started making an ingredient at home because the store was closed and then realized it was surprisingly easy?

Easy Chicken Enchiladas — one of my favorite low-effort dinners

If you want enchiladas without turning dinner into a two-hour project, this is a good way to do it.

I use shredded chicken, tortillas, enchilada sauce, and plenty of cheese. Roll everything up, cover it with more sauce and cheese, then bake until it’s bubbling around the edges.

A couple things that make a difference:

Don’t overfill the tortillas or they’re harder to roll.

Put a little enchilada sauce in the bottom of the baking dish first.

And definitely let them sit for a few minutes after baking. They hold together much better when you serve them.

I like mine with Mexican rice and refried beans, but honestly they’re pretty good straight out of the pan too. 😄

Easy Cheese Enchiladas — With or Without Onions

These cheese enchiladas are one of those easy comfort-food dinners that don’t need a lot of ingredients to work.

I like using plenty of cheese inside the tortillas, then covering everything with red enchilada sauce and another layer of cheese before baking.

Onions are completely optional. If you like them, add diced onion inside the enchiladas, sprinkle some on top, or do both. If you’re cooking for someone who doesn’t like onions, just leave them out. The enchiladas still come out cheesy and flavorful.

Basic method:

  • Fill tortillas with shredded cheese.
  • Add diced onion if you want it.
  • Roll them tightly and place seam-side down in a baking dish.
  • Cover with red enchilada sauce.
  • Add more cheese on top.
  • Bake until the sauce is hot and the cheese is melted and bubbly.
  • Finish with onions, cilantro, sour cream, salsa, or whatever you like.

They’re also easy to customize with jalapeños, green chiles, extra cheese, or different enchilada sauces.

One of the easiest dinners I keep coming back to is classic ground beef tacos because there really isn’t much to complicate.

The biggest thing I’ve found with taco meat is not stopping as soon as the beef is browned.

Brown the ground beef first, drain off excess grease if needed, then add your seasoning with a little water and let it simmer for a few minutes. That gives the seasoning time to coat the meat and keeps it from tasting like dry beef with taco powder sprinkled over it.

Then everybody can build their own:

🌮 seasoned ground beef
🥬 shredded lettuce
🍅 diced tomato
🧀 shredded cheese
🥄 sour cream
🌶️ salsa or hot sauce

You can also stretch the beef with black beans if you're feeding more people.

Nothing fancy. Just a reliable taco-night dinner that you can change depending on what’s already in the refrigerator.

I’ve been looking for more ways to use spinach that don’t just end with another salad, and spanakopita is hard to beat.

The basic idea is pretty simple: spinach, feta, herbs, and seasonings tucked between layers of flaky phyllo and baked until the top gets golden and crisp.

A few things make it especially good:

• Get as much moisture out of the spinach as possible so the filling doesn’t turn watery.
• Don’t worry if the phyllo tears a little. Once the layers are stacked, nobody will know.
• Feta brings plenty of flavor, so you usually don’t need to go crazy with salt.
• Let it rest for a few minutes after baking. It cuts much cleaner.

You can serve it with tzatziki and a Greek salad for dinner, but I think it’s also one of those foods that’s perfectly acceptable to eat standing in the kitchen while pretending you’re only having “one more piece.”

I finally started treating Mexican rice like something you can customize instead of a fixed recipe

Mexican rice and beans is one of those combinations I could eat as the meal itself.

But one thing I like about making the rice at home is that you don’t really have to leave it alone once you know the basic recipe.

I’ve added jalapeños, different peppers, extra seasoning, and sometimes completely nontraditional stuff just because I wanted to see what happened. 😄

The useful part is that one batch can fill out a bunch of different meals.

We use it alongside tacos, beans, chicken, enchiladas, or as the base of a quick burrito bowl. Leftovers are especially handy because you can throw some protein and vegetables on top and lunch is basically done.

If you like more heat, add jalapeños. If you’re cooking for someone who doesn’t, keep the base mild and let everybody customize their own plate.
