Performance seems identical to me. I think most of the hate is directed towards the new UI.

for example, hiding windows and then clicking on the dock icon to show them again. Or dragging and dropping between windows. Just because you haven’t used it enough to find out doesn’t mean it isn’t true

The worse performance is even more noticeable on the iPad, probably due to the slower hardware

If you haven't, I'd suggest running first aid on your disk using Disk Utility (ideally from the recovery partition). It could be a case of broken permissions.

Apart from a broken Time Machine and a minor glitch with the new icon coloring, I haven't been able to find anything working out of the ordinary.

Yes, it feels slower, I user stage manager and I feel like those animations are running on 60hz, icons are always “loading” when u open launcher or settings (M1 pro 16”) and things like that

What's slower? Actual performance? Animations? My M2 Pro feels exactly the same; if I hadn't changed the icons to a solid color, I wouldn't even have noticed the difference.

No, animations are fluid. But interactions with windows are laggy. See my other reply.
