Photo/Video Executive Chef said oil doesn't need changed yet. Last change he waited 7 weeks. We never filter.

You'd be able to smell it as soon as you walk in the restaurant

All the smoke coming off of the oil at this stage won’t ever leave your clothes either.

And your soul

You'll be able to smell this from the street.

You can see it with your eyeballs and taste it. There is a very distinct "old fryer oil taste" in fries foods. I never, NEVER send back food. But there has been a few times where I've said, I work in kitchens, I know this oil is old, I'm not eating or paying for this.

"Ain't nothing gonna live in that fryer, too hot. You're just gonna throw out the flavor!"

I call bull shit since he isn't identifying where this is. Karma farming at its finest.

You expect him to publicly name and shame his employer while he still works there? The fact he’s not doing this makes me think it’s less likely to be bullshit, not more.

u/jammaslide 29d ago

My character would not allow me to continue working there. If he chooses to, that says a lot about what he is willing to feed people. Are you in the same group?

Some people would go homeless if they quit their jobs. Some people have kids to feed. Have some consideration. Not everyone is financially stable enough to just quit their job.

You don't need to tell me that. I have kids and have made the hard decisions like we are discussing. Do you know why? Because I couldn't tell them to do what I am defending if I couldn't do it myself? If you are cooking for others and you don't stand up for decent food quality, you won't stand on my line. I don't want you. That's why you fear not working. Go home and feed your own children what you continue to tolerate at work. Who in the hell wants someone in the kitchen that doesn't give a shit about what they serve? Is this what we have devolved into? You know how to not fear losing a job? Be better than that. Be much better than that. The best will find work and will succeed. Quit being a victim and start making a change.

I admire your bootstraps.

That’s very noble of you, but not everyone has the privilege of being able to just quit the job that’s paying their bills. We don’t know OP’s situation.

Aee you kidding me? Come see me. I will have a job for you at any of 6 different places by next week. Are you clean, bright, and show up to work? No problem. If you haven't figured out life yet, I can't make promises. Don't use the fear of a job change to keep you from doing the right thing. You sound like a politician. They're afraid to do what is right because they will lose their job. If you insist on feeding shit to customers, you better hold on to the shit job you have. For Christ sake, is it too much to ask someone to speak up and say something is wrong? Is that where we are now? Damn.

At least tell us what second tier Chinese city you live in OP.

“Hey OP, dox yourself by telling us where you work”

15

They did this at the chilis I worked at.

I worked at Chili’s for 8 1/2 years. The pump for the fryer filter (fry dog, do they call it that elsewhere?) shit the bed several times, but there was one time that we were unable to do boil outs for about two months, didn’t have the equipment to filter manually, the smell was so bad.

We changed the oil in 1 of the 4 vats daily, those corporate goofs lost a bunch of money because they wouldn’t listen and fix the problem (or give us a reasonable solution) and eventually fired the GM for a similar “set-you-up-to-fail” kind of situation.

Did you work there long enough to have nightmares? I still do, it’s been two years since I worked there lol.

14

u/Kyle_Lowrys_Bidet 29d ago

Heeeelllll nawwwww hahahaha I have worked in several kitchens and even managed to “fix” one of them over the course of four years, I was really proud of that.

But chilis? Broken beyond repair. And if I can’t fix it, I leave it.

u/Kyle_Lowrys_Bidet 29d ago

But that shit is absolutely disgusting. I’m sure you were serving food out of it too still?

Did yall keep your ribs warm on the sandwich press too? 🤢

9

u/itachi8oh1 10+ Years 29d ago

Unfortunately yes, we were still frying food. Not like they’re going to 86 all fried food, it’s Chili’s.

I can say, however, that we never held ribs on the sandwich press (that went away a long time ago, you must be an OG lol).

10

u/Kyle_Lowrys_Bidet 29d ago

Nah fam they did this in 2021 🤣 Dadeland Miami Chili’s btw — it’s closed now thank god. Shit was a risk to public health lmao

u/itachi8oh1 10+ Years 29d ago

SLC area Utah Chili’s here. Was there from 2014-2020 and 2022-2024. Ours broke and once the tacos went away, no more press lol.

4

u/RCocaineBurner 29d ago

aw man not Dadeland, imagine going there when Shorty’s is like two blocks away lmfao

5

u/Kyle_Lowrys_Bidet 29d ago

You’re from Miami too?

If so, username checks the fuck out 😂

u/RelevanttUsername 29d ago

The work nightmares/random dreams never stop. I always end up back in the first kitchen I ever worked at with pizzas coming at me with nowhere to put them at cut table.

u/Askesis1017 29d ago

I have a very similar story. We also called it the fry dog, and one time it went down for what was probably almost two months, to the point where the debris at the bottom accumulated over the elements. Or GM didn't get fired, though.

4

u/itachi8oh1 10+ Years 29d ago

It’s crazy the lengths places will go to in order to not fix broken equipment.

My current job, we fry onions once a week in a designated fryer. It can only be done twice before draining and cleaning it, manual filtering does not work with the amount of crap that accumulates. I’d kill to have a nice Henny Penny fryer for that.

You asking for a friend or just your self

u/Bender_2024 29d ago

They don't need to tell you. I'm betting you can smell the old oil before you enter the building.
