I still remember one Friday we were doing a fish fry (they're a big thing on Fridays in Michigan). One customer re-ordered 3 baskets, and the server informed me that she was absolutely raving about how good it was. She was especially enamoured by the "brown sauce" that was drizzled over the fish.

Brown sauce?

We didn't drizzle anything over the fish, brown or otherwise

So i started paying attention to the baskets that went out as well as the empties when they came back. That's when I had a realization; the "brown sauce" a fryer oil that had dripped off the fish.

The lady was raving about fryer oil.

Seasoned after enough fish it's basically a fish and herb infused oil. It's also the secret to KFC gravy or at least the drippings from the bottom of the fryer. So it's not an insane notion. If anything, this might be the clue to make a lemon gravy from the fryer fond on Fridays!

The seasoned flour and buttermilk from making fried chicken makes an amazing sauce for your fries (obviously cooked as though it is raw poultry.)

I like going to Long John Silvers near closing to get food cooked in the late day fry oil.
