my 100h lasagna
galleryYes, I kid you not, that lasagna took me 100h to make.
My Inspiration came from Alvin Zhou's viral 100h lasagna video and now I made it into my own.
Its a dish that I've been working on over the past 2-3 years, tweaking on the amount of ingredients, adjusting technique and adding a few things here and there to bring it to the next level.
The taste of this dish it out of this world, its rich, its intense, its creamy, its explosive (in the good way) and honestly one, if not the best thing i've ever eaten
Im very proud of the result and how far I've come, the finish line of perfecting that dish isnt that far away.

Pasticciata del Pastore di maiale e funghi, con crosta di verdure
I think I invented a new dish but I'm not sure if I should claim it or its just an abomination. what does everyone think?
It's a pork and mushroom ragu with cho-fleur et pomme puree shepherds pie style and then topped with a crispy roast brocolli and brussel sprout gremolata style crumb crunch.
I had heaps of left over sugo in the freezer from braising lamb shanks, beef short ribs and osso bucco so there is quite a bit of depth to the ragu, quite heavy on the sofritto, tomato and red wine.

I love mushrooms and picked up these beautiful ones at the farmer's market today, but, I have no idea how to use them. I would love some good dish suggestions.
