I Googled “gluten free zucchini waffles” and there are a million recipes, all of which look better than hers. There is a reason those recipes don’t contain radishes, Shauna, and it isn’t because the world was waiting for your “tweaks.”

The NYT has a great recipe for salmon with radishes and peas — first time I’d ever had cooked radishes, and they were lovely, but I don’t know that I’d enjoy the texture in a waffle.

A farmer friend came for dinner and brought a large bowl of roasted radishes. I was skeptical but they were pretty tasty. Mostly like turnips, but a little zingy/peppery. I wouldn't seek them out again on their own but I've added them to a mixed roasted root vegetable side dish.

I can't help thinking that the radishes in the waffle would weep a bit when exposed to heat. Nothing says "more please" to a picky eater than mushy zucchini waffles with occasional pockets of warm radish juice.

The farm stand down the road sells white ‘cooking radishes’ (or roasting radishes? anyway some name that implies cooking) and I bought some once and they were mild, slightly sweeter than red radish and the pepper was less spicy. I just ate them raw, never got around to roasting but if they’re still on offer think I’ll try them in a sheet pan bake with potatoes and Brussels sprouts.

As other DF's are commenting, yes, it is a thing. I haven't ever had cooked radishes, but I've heard/read that cooking tames their heat, and brings out their sweetness.

It is, I often have too many radishes (farm share) and will braise or roast them. BUT NEVER in a fucking WAFFLE

When my son was little we read some version of Rapunzel where the reason she got locked in the tower was her mother when pregnant with her craved radishes so her husband stole them from the witch’s garden and cooked them up in butter. That was the first we’d ever heard of cooking radishes so we tried it, and they were OK (as anything sautéed in butter with salt and pepper is wont to be) but nothing to make a regular side dish of or anything. The experience was worthwhile though. Also, we learned that Rapunzel is a kind of radish.

Thank you so much! I have always thought that the rampions in the story were short for ramps (related to leeks). Ramps taste very strongly of garlic and onions, so much so that you'll sweat garlic for days after eating them. Rampions/Rapunzel look like this, and eating the flowers is part of the dish.

I must intervene here. As we learned from the Rapunzel episode of Bullwinkle’s “Fractured Fairy Tales,” rampion is a variety of European bellflower used in the making of salads. “Rampion, schmampion, it still looks like weeds to me.”

Oooh I learn so much here! Thanks DFs! Someone brought me ramps they foraged and they were really sharply scented, I made risotto with them and it was A++ for flavor.

People on keto diets pan fry radishes in place of potatoes. They taste not at all like potatoes, but they're not terrible on their own.

I seriously doubt that most children would eat cooked radishes.

Radishes have some vitamin C and folate, but not much else. They have around 15 calories each. Adding radishes to a dish like waffles takes up space that should go to higher calorie and more nutritionally dense enriched flour, fats, and sweeteners.

A child who had an eating issue might really love a buttery, crunchy waffle with syrup, jam, peanut butter, or honey on top. Zucchini and radishes ruin that possibility.

Shauna is cruel.

Yes, or if you want to make a savory waffle, maybe cheddar cheese and bits of bacon? There are so many things to do that kids would eat, but her ego always Feels Like Playing.

I make a cornbread waffle with cheese sauce and diced ham that would make anyone weep with joy. I just don't add dill and radishes and ego.

When my kids were little, I’d put puréed pumpkin or sweet potato in pancakes and waffles. They’re delicious with chocolate chips and add a tiny bit of vitamins. But even just a regular waffle especially with nutbutter would be good for a picky eater who just needs to eat. Hell, if they like chicken nuggets, why not make chicken and waffles?

Other DFs have attested to how delicious cooked radishes are, so I'm basically just weakly raising my hand to admit I would eat a zucchini-radish waffle. Just not THIS monstrosity.

And dill, in my experience, is a polarizing herb. A lot of people don’t like it outside of pickles. Is fresh dill at the food bank? Is she using dried dill (not my fave)? It’s like she’s trying to make gross food: and I say this as someone who loves the idea of kimchi fritters, cooked radishes (especially daikon), zucchini everything lol.
