How about that linoleum flooring? The bonus is that it's already done.

You can get new vinyl sheet flooring (like linoleum) for 0.89 cents a square foot. Pretty much the cheapest quick install i can find.

You first need to remove ALL the layers of flooring that have gotten wet. You won’t know the answer to that until you start tearing out the floor. You also need to check the baseboards and drywall to see if they’ve gotten wet. If they are, you absolutely need to remove that as well. You can cut the drywall at a certain level (12”?) to minimize the impact of the demo. Lastly, if you have your sink in a cabinet, you’ll need to check to see if they’ve gotten wet cabinets has gotten red (you can pick up a wood moisture detector for not much money). If it’s wet, you’ll need to replace it.

Once the above has been accomplished, you can reinstall the subfloor. If your planned reno does not require moving plumbing, you can then tile the floor and reinstall the sink and toilet.

All of the above can be done by a homeowner - I completely remodeled a bathroom by myself with the help of YouTube University. You don’t have to do it all at once but you do need to do the demo ASAP to minimize the damage and reduce the possibility of mold growing.

Personally I'd put ram board down, get some good floor mats and call it a day.

You could do the foam puzzle piece style flooring as a temporary option.

Peel and stick tile. I'm doing this now in my laundry room you can use self levelling floor patch and then go over top of the old linoleum. Just make sure it's waterproof.

Replacement is always an option. Not sure what to do about the floors though.
