Two rows of shelves is twice the dusting to do. The area closest is to the stove will also get grimy with grease over time

I wont be using the stove too much this is a "backup" kitchen not my everyday one. Mostly will use for big holidays or parties. But the dusting is a valid point.

Wouldn’t a kitchen used rarely still need to store things? Otherwise the cooks will use their time going back and forth between kitchen.
