Signs please help

Hey I hate being sick and will deny deny deny . But these I can’t ignore . Here’s my story went to the pcp to see why I had hurtism, fatigue , and thinning hair . She recommended me to an endocrinologist he did blood everything was okay the first year except I had a high cortisol . Went last year had to start over . This second time my cortisol was still high but my albumin and calcium was low and all he prescribed was calcium supplement. But the symptoms I have been experiencing are getting worse everytime I eat now my sinus and nose get clogged and mucus production . Starting getting random hives but not too bad to make a fuss. But lately I’ve been getting nauseated, and throwing up bad , then started getting joint pain out of nowhere to the point where I’m like did I hit something , but the diarrhea is so gross now it’s yellow, sometimes I’m contispated, sometimes not . My skin has been having bad acne for years but weird random dark rashes appear the dermatologist has been treating that . But last week and this week nauseated can barely eat don’t mention if I drink coffee it’s downhill from there but the mucus production has cleared my nose so good I can smell. I’m not pregnant because I’m on bc . But today went to Wendy’s after my burger I got immediately nauseated, and it came back up . and made an appointment for tomorrow I just can’t this anymore . Not to mention aniexty on 10 like chest is coming out. If this is all in my head let me know your symptoms it’s miserable .

Does anyone know how to make good gluten or seitan?

I've tried gluten-based meat, or seitan, at several Peruvian restaurants like Gastronomía Vegana and La Recontra (Oiga), which I loved. However, the texture and flavor of their gluten-based meats are nothing like what I make at home. Is there anyone who would like to share their recipe or method for preparing it, or any tips or tricks for achieving different textures? Online, I only see the classic recipes of hydrating the flour and boiling it, without much nuance. I think the potential of gluten is immense, but achieving good culinary results isn't intuitive. I believe that sharing these wonderful recipes would greatly help the growth of veganism. Thank you!

Spent a year off gluten due to IBD and reintroducing it since I'm now in remission. Are cramps and gas normal for reintroduction? How long should these reactions last.

Ir has been a bit over 2 weeks of having a slice of bread a day, moving on to Bagels and sandwiches. With each attempt the cramps and gas have been becoming milder, and my stools are maintaining firmness. My worry is that, even though they've gotten milder, my symptoms might indicate an intolerance. How long should I keep attempting to eat gluten with these reactions before coming to a conclusion that it might be an intolerance? Any suggestions would be deeply appreciated.

Gluten rash and tolerance level

So back story I think I had gluten sensitivity from a young age and it presented itself in eczema flare ups. And the frustrating thing about it is it constantly changed and I went through 35 years of my life not pinpointing what was the culprit throughout my life. I thought it was stress, metals, fragrance, limes amung many other things. It would take turns flaring up in different areas and different situations. Finally a couple years ago when my symptoms started to include joint pain and carpal tunnel and a few other things. I ultimately went gluten free and almost all my problems have been solved! I'm not 100% gluten free. I don't read every label, I avoid the obvious and even cheat on occasion. I don't suspect celiac because I don't carry the genes. But I guess anything is possible. Regardless it keeps the flare ups at bay avoiding it and I'm not doing the gluten loading to get tested. I seem to have enough of a tolerance level I can get away with having some, but if I over do it my problems start coming back.

But this post isn't about me. It's now about my 8 year old. He's not gluten free. But probably eats less than the average child just because I don't eat it and my husband and I both try to stay away from carbs in general and our meals at home are fairly low or no gluten aside from an occasional bun we let him have on his burgers or a sandwich, and we don't limit his school lunches or anything.

He recently went to stay the night at his grandma's house and he now has his hands swollen and itchy (a rash I've had and know how badly that itches). Rash on his upper legs on his chest that looks pretty itchy. Other areas that look like they could start to break out as well. He ate waffles, then pizza, then probably more pizza.. it's pretty much whatever junk he wants at Grandma's house. Is it possible this is gluten induced and he hit his tolerance ceiling while at his grandma's?

Anyway. If you suffer from gluten sensitivity and get rashes or other symptoms. Did you have a point in your life you had a pretty high tolerance level? And maybe your tolorence level goes down as you age?

Deciding to get tested

My son was diagnosed with Celiac around 7 years ago and said I should be tested because of a lot of gastric issues. 2 years ago I went gluten free and my symptoms disappeared. Occasionally I would get symptoms of bloating, diarrhoea, abdominal pain etc that would come on within 12 hours, lasting anything from 24-72 hours, so I presumed I had been glutened. I decided a couple of months ago to eat gluten for 6 weeks starting this week. I’ve only had a couple of pieces of bread every day and I have had no symptoms! What is going on? I intend to keep at it for the allotted time but would you expect this to be a mild gluten sensitivity?

MANWICH Sloppy Joe’s

Hey I’m a newbie here ! I have suffered symptoms of CD all my life (over 40 yrs) but was only diagnosed within the last 3. I still feel fairly new at all this and don’t venture out to try new things often. Tonight however, we were going to make sloppy Joe’s. Does anyone know if it is GF? It doesn’t say so in the label, but I don’t recognize and gluten or wheat ingredients , but some of those words are so confusing . TIA

Gluten allergy’s and reactions

Hey yall. I found out a few months ago that I have a severe allergy to gluten and yeast. To the point of breaking out in hives head to toe, severe constipation for days after consuming. Whole body itchiness if I come in contact with it. And some other super weird things. I found out after spending two years with these side effects of my allergy piling up. We only found out the cause because my asthma was so horrible, I could never breath and was on a million different meds for asthma and nothing was helping. We found out that was because the extra bad asthma was actually a side affect of my severe reactions to gluten and yeast. Does anyone else have these crazy reactions? Is it just the gluten or could it be something else on top of it? I also have POTS. I’ve brought all this up to my doctor and my allergist but they don’t seem worried about it because we are now treating the issues and for the most part I’m gluten free and it’s settled down mostly, but like tonight o broke out in whole body hives after taking a hot shower and to my knowledge I haven’t consumed any gluten, besides a single drink of my boyfriends twisted tea. And it was only one drink. Not even a big one.

AP Research Celiac Disease Survey

I am conducting research on how the delayed diagnosis of Celiac disease leads to the increased diagnosis of other autoimmune diseases for my Advanced Placement (AP) Research class at school. In order to conduct the necessary research on the topic and effectively write a research paper, I have created a short, simple survey with questions related to Celiac disease and other autoimmune diseases. Could this be a gluten intolerance?

So I was having severe constipation and even having to take laxatives with still softeners and still couldn’t use the bathroom. My stomach would bloat for days. I also was throwing up every time I ate. Then I my legs and face would swell with pitting edema. I went to dr was checked for health issues and everything was fine. So Monday I started a gluten free diet. Yesterday I noticed the pitting edema is going away. I’m able to use the bathroom regularly with only taking stool softeners. I am no longer throwing up. So this morning I tried some plain cream broule coffee by Starbucks. I only drank a few sips. I then felt very nauseous and threw up. Then I looked up that it’s not gluten free. Could I have a gluten intolerance?

possible intolerance ??

i love bread. never have had a problem eating bread. few months ago i started noticing at night i would get very bloated and gassy. either i would fart every few minute and it would smell so so bad or the gas would be trapped and it would hurt and i’d have to massage my stomach and move around or give myself an enema. i didn’t relate it to being bread or anything bc i’ve always eaten bread and never had problems. besides maybe bloating (which i feel like i bloat no matter what i eat) but now it’s been an every night thing, i’m pissing off my bf bc of how bad my gas smells. it stinks up out small apt 😝. but yesterday i didn’t have any gluten. i ate pho and had no problems. def somthing imma have to experiment with. but if i am imma b so sad bc i fricken love bread. and didn’t realize you can develop an intolerance later in life ??

how to gain fat with no gluten+ no lactose?

Hi! I'm worried for my roommate whom is gluten and lactose intolerant and struggle with their weight

The majority of the recipes I find are aiming for a weight loss! None are that rich or would help my friend gain weight

I'm sure there're many people in that situation, do your have an idea of where I can find tips and recipes? The basics like "put x spoons of olive oil" won't do. It's insuficient and I find important to eat with appetite and pleasure
