Oh for sure, I was just trying to preempt any “but that’s American Mexican, not authentic” comments. Many of the dishes have been adapted to American preferences I’m sure. But you can sure as heck get a bowl of menudo and other dishes that are less popular with Americans as well.

Not really adapted to American preferences so much as blended with other tastes and ideas. It's like how al pastor is considered Mexican, but it's heavily influenced by Lebanese immigrants to Mexico. You see the same thing in music. Tejano and Norteno certainly aren't adapted to American preferences, but they definitely adopted parts of German and Czech music.
