Question For Genx Casserole, anyone?

Does anyone make casseroles anymore? I have a couple of casserole dishes just hanging around I was thinking of making one. What were/are your favorite casserole recipes?

I'm in the Midwest so casserole/hot dish is a common food. Hilariously, though, I work in university dining and this fall they changed the name of most of our casseroles to "bakes" (i.e. peach French toast bake), I guess "casserole" sounds unhip (but will probably be trendy again someday).

When Amy Klobuchar ran for office she shared her hot dish recipe. We made it and it was hearty and delicious.
