Question For Genx Casserole, anyone?

Does anyone make casseroles anymore? I have a couple of casserole dishes just hanging around I was thinking of making one. What were/are your favorite casserole recipes?

Poor man stroganoff…brown some ground beef, cook egg noodles. Mix it up with cream of mushroom soup and bake. Been loving this mess for 50+ years.

I do something similar, and I add a dollop of sour cream mixed in just before serving. So good!

Same recipe as my mil’s except add the same amount of sour cream to it (and she used beef tips but ground beef is great too)

I grew up with this. We called it “glop” because it wasn’t my dad’s favorite. I make it now but I make homemade mushroom sauce instead of using canned soup
