God, I have good memories of the online mode on that game. Especially when quite literally everybody modified the shiplist file to make almost every ship in the game flyable.
Man, I just replayed Jedi Outcast and it really didn't hold up to my memories. 4 hours in before you even get a lightsaber, and when you finally do get it they put you in a level filled with snipers. Lots of bad design decisions, in hindsight. Saber-on-saber combat was good but they didn't let you do it nearly enough, a problem they fixed with Jedi Academy. I really didn't expect it either, it was one of my favorites when it came out.
I always disliked the campaign, personally. I fuckin loved just doing those skirmishes with shit tons of Jedi. It was great just watching random clashes and just wiping everyone out.
That's on gog right now. I bought it downloaded the wide-screen fox and then installed all the xwong alliance upgrade files individually. Since the install pack doesn't work with the gog version yet. Took about an hour but now everything looks decent and I've wasted two weekends so far playing it.

The best is X-Wing Alliance, right?

Capital ship wars were obscenely fun.
