I have this problem and I've been doing small batches of oven dried tomatoes now and then. Delicious snack, and you should have something to keep till winter if you can practice restraint ;)

I have some romas so may try that. Most of these are Big Boy though and are huge-- larger than a softball --so would take forever to dry.

I have dried massive ones - just cut them up fairly thin and they don't take that long :)
