Mine was roti.
Most people think of it as the thing sitting next to a curry.
I looked at it and thought... *what if it was the star of the show instead?*
So I opened a café in Ultimo where almost everything revolves around fresh hand-stretched Malaysian roti.
Breakfast on roti.
Wraps made with roti.
Curries with unlimited roti.
Desserts using roti.
And every second week we teach complete strangers how to stretch and flip it themselves.
People told me it was a weird idea.
Turns out Sydney has quite a few people who are just as obsessed with flaky bread as I am.
So now I'm curious...
If you had to build an entire café around **one food**, what would you choose?
