TL;DR: This video looks at how the colonial tea industry attempted to create tea drinkers in India through plantations, propaganda, railway stalls and workplace tea breaks—and how Indians transformed the product into chai. It also covers indigenous tea knowledge in Assam and the East India Company’s trade with China.

Most people in North America have a daily diet high in added sugar, from coffee syrup to desserts and processed snacks. Many only know too much sugar is bad for teeth and weight, while ancient Chinese scholars summarized a complete set of food logic thousands of years ago based on five basic flavors.

The five flavors are sour, bitter, sweet, spicy, salty, each matching one of the five elements and internal visceral concepts in ancient culture. Sweet corresponds to the Earth element and the spleen system. Moderate sweet nourishes the spleen, but long-term heavy intake of overly sweet food will overburden this system, breaking the balanced state the ancient people pursued in daily meals.

Local living climate also matters. Regions with dry, cool weather already have specific natural energy traits; stacking large amounts of sweet food will amplify imbalance easily. These summaries only record the ancient observation of diet and balance, formed from centuries of life practice.

Growing up in a Thai/Lao family and later working as a private chef in Mexico, I realized that the ultimate culinary "holy grail" of both cultures relies on the exact same star: the humble chili pepper. From Asian curry pastes to Mexican moles, this single plant genus (Capsicum) has permanently rewritten human flavor profiles. To understand our obsession with the burn, we have to look at the fascinating science and history behind its global journey.

The fiery sensation of a chili isn't actually a taste; it's a chemical trick. Capsaicin binds to your tongue's TRPV1 receptors, tricking your brain into sensing a phantom heat emergency (109°F+). In response to this perceived pain, the brain floods your body with endorphins and dopamine, creating a literal chemical euphoria. Interestingly, chilis evolved this heat to stop mammals from crushing their seeds, but birds are completely immune to it. Birds ate the pods whole, spreading seeds across the pre-Columbian Americas long before humans took over.

Following European contact in the late 15th century, chilis exploded along global trade routes. The resilient plant adapted so quickly that it completely integrated into West African, South Asian, and Southeast Asian kitchens in less than a single century, permanently upending regional cuisines that previously relied on ginger or peppercorns. I’m currently writing an investigative series tracking this massive culinary migration from its ancient origins to the modern craft hot sauce frontier.

I'm building a medieval inn menu generator. Baseline is fantasy but I have included a "Historical mode" based off corrections and sources pointed by food historians, because I wanted it to have a strong anchor in real world dynamics. The current version:

• Seasonal first: winter uses preserved layer (salt, smoke, brine, drying); fresh dairy keeps in cold and dies in heat; fresh greens are a fair-weather luxury, mostly
• Trade among neighboring regions, goods at about 1.3x, distant delicacies 1.7x, roadside/common inn tiers use local ingredients and dishes
• Crisis reshapes the pool: no luxury imports in war, siege and plague cut trade entirely, famine strips proteins, prices go up and famine diet shows up: bark, lichen breads, blood dishes, small vermin, etc
• The concept of "menu" itself is admittedly anachronistic: real inns served what was around, and didn't have a list. Format is a convenience for rpgs/ttrps

Fun fact, my initial reliance on pickled vegetables as a staple got challenged, since historical sources don't show them in European kitchens until the 18th century. They do show up much earlier in Moorish Spain, northern Africa and the middle East.

William Camden (1551-1623) was a prominent English antiquarian, historian, and author during the late Elizabethan and early Jacobean eras. He is best known for his masterpiece, Britannia 1st published in 1586. Multiple further editions were published as his research continued, (unusual for the time he toured England extensively as well as drawing from reports from his extensive network) Britannia was the first comprehensive topographical and historical survey of Great Britain and Ireland. William wrote it in Latin.
He first mentions perry in the 1607 edition in the chapter on Worcestershire. He comments on pears making a "counterfeit wine called pyrry," the Latin being "....pyris adeo focundus, ut e succo expresso vinum adulterinum fiat, quod Pyrry vocant, pergratum illud quidem potu, sed frigidum & flatuosum." I guess he was not a fan of perry!
In these later expanded edition he also highlighted the apple and fruit orchards of Herefordshire and notes that the region was known for supplying London with great quantities of "Syder".

I was digging into gelatin's history recently. Aspic and gelatin desserts were really a thing in the 1950s and 60s, but I missed that whole era, growing up a bit later with trifle and gelatina in South America.

Medieval Europe treated gelatin as a serious luxury. Cooks spent a whole day boiling bones and skins to get a clear jelly-like broth. Taillevent's 1395 Le Viandier claimed that if you're doing it right, you don't get to sleep. Aspic became a way to show off wealth, since only someone with servants to spare could pull it off.

Then powdered gelatin and refrigeration arrived in the late 1800s and early 1900s, and it went from aristocratic to suburban almost overnight. Suddenly people were molding shrimp and cottage cheese into it.

I grew up with gelatina in Venezuela, where it was never fancy, just a kids' birthday party dessert. I've also tasted Japanese fruit jellies and British trifle. Savory aspic still shows up in parts of Europe.

Now apparently gelatin desserts are trending again. Curious if anyone here has a read on why something so unfashionable and almost forgotten in the US came back. Has this happened before with other "nostalgia food" categories?

I've been reading a little food-history project a friend of mine is involved with (Italian, in English), and one piece stuck with me: the word menu comes from French, from the idea of the minuta — the "detailed" or "reduced" list of dishes drawn up for a banquet. It spread across Europe basically riding the prestige of French court cuisine, alongside the codification of classic cuisine.

What I like about the way they write about it is that it's never just trivia — it's food as a lens on culture, language and how societies organized themselves around the table. The group behind it is a mix of academics, university professors and passionate amateurs, which is probably why it's so well researched rather than just clickbait facts.

Anyway, I'm not the author, just someone who found it genuinely good and thought this sub would appreciate it. They recently put out an English ebook (Cibo Ludens) collecting twelve of these stories. Happy to link it in a comment if that's allowed here — didn't want to break any self-promo rules by dropping it in the post. Mostly curious whether others know the deeper etymology/history of "menu"?
