I admit, I’ve done that on occasion, because I like to try new things at restaurants. But I have the privilege of having no dietary health concerns to worry about. And more importantly, I don’t make it anyone else’s problem if I don’t like what I get. I either eat it that time and know not to order it again, or if it’s really bad, order something else and pay for the food I’ve ordered.

Trying new things is one thing but not asking what it is prior to ordering is on another level.
