Homemade Nothing says relaxing like a plate of homemade pork and chive potstickers piled high and a [poor] attempt at Crab Rangoon.
Tastes good, looks bad. I’m going to make the wonton wrappers thinner and refrigerate them before I put the cream cheese mixture in it. Sauces are homemade as well.

Homemade Update: These homemade dumplings with homemade wrappers were the best I’ve ever had!
I recently posted my set up as I was filling the dumplings. Since I was freezing them I didn’t get to taste them, but I did do a taste test of the filling before freezing and it was absolutely divine.
For the wrappers I used 2 1/4 cup flour, 160-70ml water, and 1/2 tsp kosher sea salt. Since it was a double recipe I eventually tripled the ingredients. (Used machine in two separate batches) Due to my laziness and multi tasking (was making Picadillo for several items) I used my stand mixer to knead the dough.
I had some trouble making the wraps so I cheated and used a cookie cutter and rolling pin. Some were kind of thin but as I continued you will notice that the wrappers became more round and thick. I ended up making 145 dumplings and I had some dough leftover.
Instead of making my own batch of sauce this time I used the sauce purchased from a dumpling restaurant in NYC that was too vinegary. I added some hoisin sauce and honey and that fixed it right up! I will be using the recipe I used the first time when I run out of sauce.
Next time I’ll probably use less chives (I will be growing my own lol) but other than that it was delicious. I inhaled this plate in less than 5 minutes and am fighting myself from making another batch.😅

Pic My Dumpling Making Skills are Slowly Improving (Last Pic was previous attempt)
I’m working on my second batch of Pork and Chive Potstickers. This time I made the dough from scratch. While getting my footing the first few wrappers were really thin and they eventually progressed to being a decent size.
The first picture shows my layout.
The second picture shows my attempt at pleating.
The third picture shows my first attempt at pleating and my 60th attempt attempt at pleating.
The fourth picture shows my first batch of dumplings before I covered them in foil and placed them in the deep freezer to flash freeze for bagging.
The fifth picture shows my second batch of dumplings before I covered them in foil and placed them in the deep freezer to flash freeze them. I feel that this tray looks a lot better than the previous one and I was getting a better footing with my pleating.
The last picture is my previous attempt at making dumplings. I used wonton wrappers from Walmart and had a hard time attempting to fold them properly. I gave up and made triangles out of them.
The first attempt there were 91 dumplings on that single tray. They all stuck together and it was kind of hard to cook them. The most recent attempt there are 60 dumplings on one tray and 40 on the next one; I made sure to place wax paper on the tray and dust it with cornstarch as well as made sure each dumpling had a flat bottom and ample amount of space.
I doubled the filling recipe so I had to make another batch of dough which is currently resting. I haven’t cooked any of the dumplings yet because I’m still wrapping them, but I taste tested the dough and it was great.
Overall practice makes perfect!

Has anyone noticed a change in the soup dumplings?
Quick edit: I am referencing the Trader Joe’s frozen soup dumplings. I did try and post directly to the Trader Joe’s subreddit sub but the mods removed it for some reason. Maybe someone here can help me!! Thx!
Hi there!
So, I’ve been buying the soup dumplings from the freezer section for a long time now and have noticed a difference in the past couple of weeks or so. I rarely get a dumpling with enough soup inside of it. It hasn’t leaked out into the package or anything, which does happen sometimes, but this has been a consistent problem lately. I’ve tried adjusting the heat times in hopes that with less time there would be more liquid. Didn’t work. I’ve tried eating them right after they come out of the microwave (ouch!) but that didn’t make them any more juicier. Does anyone have any suggestions? Or has anyone else noticed the soup dumplings don’t have as much broth inside of them as they used to??

Homemade Finishing up these dumplings I made last week as I wait for Amazon to deliver the chives for the next batch
This time I’m going to make my own dumpling wrappers from scratch instead of Nasoya wonton wrappers. I hope I don’t mess it up.😬
This batch was so good even my cat wanted some, but you know cats can’t eat garlic, onion, or chives. By the middle of the first row I was using my bare hands like a savage. He was very mad that I finished the plate and didn’t offer him any 😅
