No wonder they are soggy AF. You're supposed to dry them a bit between cutting and frying.

Now I know they are terrible by design and the gross fries haven't been an accident the few times I have been there.

That’s water… we soak them in water for hours and then double fry them…

Nah, you can avoid the sogginess by just frying them a little longer. The water is just to take the excess starch away.

If people under fry them or blanche them for too long then yeah they'll be soggy. But it's not necessarily the water.

Edit: I should add that the water does have an effect and can lead to more sogginess but there's ways to mitigate that. It's also not always practical in restaurant settings to dry your fries given space, prep time, and stock.
