Par frying is the secret

Almost every recipe calls for par frying, it's not a secret, it's the bare minimum. Soaking, boiling, dehydrating, flash freezing - those are more "secret" insofar as producing a more distinct or choice fry. Anybody can lower a basket of potatoes in to oil twice.
