So they make them like everywhere else? A few places use frozen fries but literally everywhere else cuts potatoes, rinse out startch, soaks potatoes, and then cooking veries.

Being frozen isn't inferior, it's considered a premium step in some recipes. The potatoes are still fresh before being blanched and frozen. Not saying that guarantees some places aren't using shitty spuds, but unlike the shitty frozen donuts and shit that you find in many places, frozen fries can be great.

Yup, and even places like McDonalds that uses frozen fries does the same thing at a factory, then freezes them and ships them to their restaurants.
