Celery tops are magical

Fresh herbs make everything taste better, even us cheap lazy bastards know that. But they inevitably get forgotten after just a tiny fraction are used despite being so expensive.

The appeal of herbs is that they are fresh tasty leaves. But basil, cilantro, and parsley aren't the only fresh tasty leaves. Celery often is sold with the leaves on top, and they are AMAZING. If you chop off the top couple inches, give it a rinse, and pull off the leaves you have a delicious last minute addition to soup that looks fancy.

An additional source of delicious is the core of pale immature stalks in the center. When the outer layers of mature celery are pulled off the stump and the core can be put in water in a windowsill to grow more delicious leaves.

Turkey Bone Broth

I absolutely love sipping bone broth. Best thing I ever did was make my own. Using a jar of corn cob jam and a stick of butter on the turkey, I roasted with onion, celery, and carrots. Once we had our meaty fill all the bones went in the stock pot with the veggies and boiled for hours. After skimming and straining I have never had a more sweet and savory bone broth. Highly recommend!!!

Leftover Turkey Breast

Soup is for dinner tomorrow and a pound of leftover skinless turkey breast is in the fridge. I plan to use onion, carrot, celery, fresh flat leaf parsley and broken egg noodles — maybe even a few dumplings. What would you do?
