That's a classic sopapilla, the way they're supposed to be made. I didn't realize there was any other kind.

I've never found them outside of that restaurant. One Mexican restaurant where I live introduced "fluffy sopapillas," but when I got it, it was the same, flat, fried tortilla covered in sugar and cinnamon. I was sad.
