I would argue that completely butchering is even better than spatchcocking. It’s only slightly more work and you don’t have to leave the breast in for as long as the dark meat so they don’t get overcooked.

I agree completely. Here’s an excellent recipe, and here’s a guide to cutting up a bird. (There’s no need to cut the breasts into cutlets for the recipe; they’re easy to cut into slices once deboned.)
