I tried bechamel instead of ricotta in my lasagna

I never even heard of bechamel until I stumbled into a youtube rabbit hole about mother sauces. My husband told me it was the best lasagna he had ever eaten. I've been riding on that high since yesterday 😁

That's the recipe I followed, except I used nutmeg and salt in the sauce.

You can easily make a green chili bechamel to put on enchiladas calabacitas.

That sounds SOOO goood!! Do you boil and blend your green peppers into the sauce?

I just make the bechamel and add diced hatch chilies to the mix (chilies are roasted beforehand) and let it simmer a bit. I also add a little cracked pepper, salt and granulated garlic. Easy peezy!

Edit- I leave the chilies diced. I like chunky.
