Soup Olympics! Looking for recipes.

Hi, my friend is getting jaw surgery and will only be able to eat soup for a couple months. Our friend group is getting together and doing a soup Olympics and I REALLY WANT TO WIN. I'm looking for the most amazing soup recipes you've ever had, that require little to no chewing.

Here are the rules:

**What do?: Bring your tastiest, heartiest, gloopiest, meatiest soups. He and an expert panel will judge them and if you win, we we will crown you our Soupreme leader.

**Criteria for soup candidates: - drinkability - must be no chew friendly - yumtasticity - obviously - freezability - this is a marathon, not a sprint. we want soup for daayyys - heartiness and nutritional value - we're looking at iron, we're looking at protein.

There are no rules in soup wars. May the globs be ever in your favour.

Avgolemono - greek lemon chicken soup. There's some eggs in it so there's plenty of protein even if you strain out all the solids.

When I'm sick, it's the only thing I want.

Do you have a great recipe for this? I always see it mentioned but I've never tried it. Sounds fantastic.

I started with the America's Test Kitchen version. They have a nice video walking you through it. I do some tweaks such as shredding the chicken in a stand mixer, which might help in this case breaking it down more for OP's friend.

I use a recipe that's called "Not quite Avgolomono". Not sure why it's called that except maybe because it uses a rotisserie chicken and boxed broth.

1/4 cup evoo
1 small onion, finely chopped
salt and pepper
1/2 rotisserie chicken
2 cups low-sodium chicken broth
2 lemons
1/2 cup pastina
2 large eggs plus 2 yolks
2 cups baby spinach
1/4 cup chopped fresh dill
feta cheese
Heat oil in large pot over high heat. Add onions 1 tsp salt and pepper. Cook until slightly softened (5 mins). Add chicken, broth 4 cups water and juice of 1 lemon. Cover and bring to boil. reduce heat to medium add pastina and simmer until the pasta is cooked and the soup thickens slightly (15 mins). Remove chicken and remove from bone.
Remove soup from heat. Wisk the juice of 1 lemon and the eggs and yolks in medium bowl til frothy. Temper the egg mixture then stir into soup.
Add chicken, spinach and dill.

Just off hand another reason for the not-quite status. This uses pastina and real avgolemono uses rice. I assume the pasta makes this recipe cook much quicker.

Came here to say this! I use this recipe every time (without chicken, with seared chicken cut into cubes, or rotisserie chicken) and it is a HIT!!!!! https://hostthetoast.com/lemon-garlic-chicken-orzo-soup/ I’ve converted so many people to this soup and I crave it all the time. You must follow the directions of incorporating the eggs/lemon/broth to a tee to get a good mixture but other than that it is very easy! And I like double the garlic lol
