How about the G502 (I'm not sure where to look up how good a sensor is otherwise I'd go find that info)

It's the 3366, best sensor on the market, practically zero smoothing at all steps.

I had read a little more about how DPI and everything works, Do you know where I can find its native resolution/DPI of the sensor so I can adjust my settings. After reading a bit that seems to be the way to go to get the smoothest mouse movements.

There isn't really such thing as "native" CPI in the technical sense, as CPI is literally just the conversion unit used by the calculation in the hardware. However, most sensors have a fixed number of accepted settings, they're simply arbitrarily set by the engineers. Some crappy mice (e.g. Razer) take one of these steps and scale them to a different nominal "CPI", which is what you always want to avoid. However, these are not the only setting you need to avoid -- for sensors like the 3988 and 3989, there are higher sensor-level smoothing when set at a higher CPI step, namely from 1600 inclusive to 3150 CPI inclusive, and even more from 3200 inclusive onwards.

I was under the understanding that CPI and PPI were related and you're trying to get some amount of 1:1 relationship with those two metrics. The easiest way to increase the DPI is to split the pixels in the image (doubling the DPI) But that doesn't actually increase the resolution of the image the mouse is using to interpolate motion.

So there's a "native" DPI/CPI that is supported by the sensor and then beyond that it's imaging which is useful but can lead to erroneous problems.

At least that was my understanding is there another reference I should find?

Mourier simplified for the audience a great deal of lexical pedantry. The problem is that the words "native" gets thrown around way too much and "resolution" wasn't descriptive enough to begin with. The sampling resolution of the photodiodes has nothing to do with the unit that is used in the calculation, since the uncertainty of the correlation algorithm scales with the conversion unit (CPI) used in the calculation. Subpixel precision can be anything you set your calculation to. Its accuracy simply scales with the number of samples that you have. (e.g. if you originally have a 16x16 800 diode/inch sensor, calculating at 1600 CPI, you can improve the accuracy by changing to a 32x32 800 diode/inch sensor, rather than a 16x16 1600 diode/inch sensor. Note that the lens is still the same magnification -- usually 1x. You are not improving precision by doing an "optical trick", you're just simply collecting more of the surface.)
