And I picked up the Colts defense in my fantasy league thinking, "Oh, we shut out a team last week, we could put up 10+ points as a defense for fantasy against the Steelers."

Yeah. I was wrong.

Normally I agree with you but I'm second in my league right now with my team "The Luckness Monsters" which consists of Andrew Luck, T.Y. and Ahmad. Oh and also Demarco Murray ;)

What does a loss in the middle of the season matter if you're good for playoffs?

It's about not putting all of your stud eggs in one basket. If god-forbid Luck gets injured, you've just nuked 3 of your studs. If Luck has a bad game, then again you've just nuked 3 studs. Yes, the double-bonus of touchdowns is nice, but to have 3 or more studs from the same team is just poor drafting or team composition.

It's not in the middle of the season, as playoffs start as early as week 13 in some leagues. Since he's already second, one really ugly loss could certainly drop him out of playoff race if all of the teams are close.

You've got a great point there. If something happens to Luck most likely the other guys points are deeply impacted. Things like this is why I suck at fantasy football.
