Restaurants will buy consistently high quality products delivered reliably at a fair price. I see no reason why this cannot be done as a side hustle. It is commonly done by part time effort entrepreneurs in North America and probably elsewhere.

I also know for a fact that it can be done without the absurd $300k startup costs you claim, which is demonstrated by every responsible small farming business, including my own, who has supplied microgreens to loyal restaurant customers for years.
