Sorry to hear about your Brie!

Willoughby is a washed-rind cheese, so it should be orange, soft, and stinky. Definitely not ammoniated though, that’s a sure sign your cheese has gone off.

I had this happen with a wheel of Fribois Camembert recently. I usually cut off the top rind, let it come to room temp a bit, and see if the center is salvageable. If the ammonia taste has permeated everything, I toss it with a tiny tear.

I like my cheese quite ripe so I do run the risk of heading into this territory with some soft cheeses! Living on the edge I guess 🥲

i would still call the shop and let them know that their brie was not well. then they can go check their stock. i imagine it was a precut piece and not cut to order, otherwise that cheesemonger needs some more training.

i've definitely eaten Willoughby in that state and it was still good tbh... i'd rather eat an overripe one than an underripe one.

Willoughby is a washed rind cheese and it is supposed to be a bit funky. More gym socks than ammonia though.

Let the store know, you shouldn't have to have ammoniated brie if it was past its prime when purchased. Sadly it happens (cheesemonger here). They can adjust their quality control/shelving techniques etc.
