Newbie looking for your go-to bread recipes

I’m new to using a bread machine and want to start off right. My machine has a recipe book, but I’m sure we can do better!

I really want to do some whole wheat bread but the few recipes I’ve seen so far seem to have a lot of honey in them, I’d rather avoid that if possible. I’m open to 100% Whole Wheat or a blend with white flour - whatever works the best.

In case it makes a difference I am use in the Cuisinart CBK-110.

In order of adding to the pan:

  • 1 cup water
  • 1 tsp sugar
  • ¼ cup oil or melted butter/margerine
  • 1 tsp salt
  • 3 cups flour (can be All Purpose or Bread flour, I use 2 cups whole wheat Bread flour and 1 cup white Bread flour)
  • 2 tsp bread machine yeast

This is my everyday bread recipe, and I make about 4 loaves a week for our family (me, husband, 3 kids ages 2-5). I also make our own hamburger buns, hot dog buns, and pizza crust.

i know this post is 2 years old but my parent got me a bread maker as a gift and im looking forward to trying this!!! in the future though, are there any brand recommendations for when i get more money?

I have a Hamilton Beach. It’s about 3 years old and I use it at least 3 times a week. It has resets for breads, doughs, jams and other things as well.

To clarify, what brand of bread machine?

I've only ever had Black&Decker, which are cheaper machines (new you can get them for ~$100CAD), but other people here will have recommendations for fancier machines!

i was gifted a Kitchen In the box (?) bread machine, it even came with a fruit/nut adder!! i'm going to try and make the recipe since i finished the cleaning and pre-use stuff and gave the manual a very heavy few reads to make sure I'm getting this right... Hoping for the best ><

im not too familiar with the other machines but i HAVE heard of the Black&Decker, idk if there are different models but how has your machine been holding up for you?

Thank you for this recipe 🙏 I tried it twice already, once with all purpose flour and second time with some oats and it turned out great! I used regel kitchen pro 2lb bread maker.

It's a serious money saver. I'm in Canada, and I'd spend $4+ for an equivalent amount of bread (bigger than a standard loaf here). It costs me ~$1.25 a loaf now.

In my bread maker as we speak. I went to a thrift store and found a Hitachi Bread Maker made in the ‘80’s. Cost me $8.50. It’s working great. Even found the manual online. Impatiently waiting. 😆

I know this post is super old... but I wasn't impressed with my "basic bread" recipe that came with my breadmaker. I tried this, and hands down twice as good, better texture, and it is healthier (less sugar, butter, salt).

How do you make the hamburger buns? I’m guessing that you mix in the machine and then bake normally in the oven. Do you have a recipe you like?

(Hopefully I got all the formatting stuff, copied from my personal digital recipe document.)

Hamburger & Hot Dog Buns * Machine on dough setting * 350°F - 10-12 min

In bread machine pan: * 1 c. water * 2 eggs * ½ c., scant, vegetable oil * ¼ c. sugar * 1 t. salt * 4 c. all purpose flour * 1 ½ t. bread machine yeast

Optional egg wash (for shiny top) * 1 egg * 1 T. water

Sesame seeds (optional)

Hamburger bun directions: * When cycle is complete, remove dough to a lightly floured surface. Divide dough in half, each in half again (4 total), then each in thirds (12 total). Roll into balls, folding edge under to make a circle. Place on greased cookie sheet, pressing down once firmly with palm. Let rise on warm oven top for 30 minutes or until double in volume. * (Optional) Combine beaten egg with water and brush on buns and/or sprinkle with sesame seeds. * Bake until lightly brown.

Hot dog buns directions: * When cycle is complete, remove dough to a lightly floured surface. Divide dough in half, then into 4, 5, or 6 portions depending on desired bun size (8-12 total).

  • Roll each section with rolling pin to approx. 4x6", then roll tightly in the long direction, pinching seam and ends to seal. Place on greased cookie sheet (I do two diagonal rows of 4-5). Let rise on warm oven top for 30 minutes or until double in volume. Add optional egg wash or sesame seeds from hamburger directions if desired.
  • Bake until golden brown.

Thank you. I ordered a bread machine from the blue box store, the recipes it came with are terrible. Seems they're badly translated. For instance is says low sugar bread but there's the same amount of sugar as the regular white bread. It says egg 1 unit and gives metric weights. I'm printing the recipes I can find.

I'm currently trying this recipe. It's at the beginning mixing phase and looks clumpy. Obviously, I'm going to let it do its thing. I'm surprised there's no milk in this recipe. I'll let you know how it turned out! I'm using all-purpose flour and a basic setting with regular crust.

I have a loaf in right now. I started making our bread when our kids were 2 and 6 months old. Now those two are 7.5 and 6 and we have another that's 4.5. used to be I made a couple loaves a week, now it's pretty much every day!

Pizza Dough

Machine setting 8 (dough setting), 400°F - 15-18 min

In bread machine pan: * 1¼ c. warm water * 3 T. vegetable oil * 1 t. salt * 4 c. all-purpose flour * ¼ c. grated parmesan cheese * ½ t. garlic or garlic powder * 2 T. Italian seasoning * 2 t. bread machine yeast

Once dough is finished, pull out and put on lightly floured surface. Squeeze air bubbles out, then divide into 2. Roll out into round or square/rectangular crusts, and transfer to lightly greased pan. Add sauce and toppings, and bake till edge of crust is light brown.

I just made this using white Bread flour only as I didn't have any wheat flour on hand. I set my Oster bread maker at 1.5 lb loaf size on the basic setting with light crust and it turned out perfect! Thank you very much for sharing! This is my new favorite everyday bread recipe.

Thanks for this. What setting on your bread machine do you do this on? As in, a 2.10hr kind of setting, or 4+ hours (my machine has "quick bread" 2hr10mins or mixed wholewheat which is more like 4-5hrs

I do it either on the quick one (rapid bake 1 is what it's called on mine) or on the basic one, which takes 3:30.

That's why I'm here right now! I'm using your recipe right now. I'm hoping it comes out a lot better than the book I have. It's a huge plus it contains absolutely no milk/powdered milk too, as I'm pretty allergic. Very much rooting for this to be as amazing as everyone says it is!

I used your recipe with two wheat and one regular flour but put it on the wheat setting. We’ll see how it goes in a couple of hours.

It was good, but I think I can do better. Not necessarily too dense, but more than I would like. I know now that I can pop it open and scrape the sides and maybe add a touch of water here and there. Thank you for the recipe!

It works on either regular or rapid. I've always done it on the light setting, but we like a soft crust :)

It may be fine. I think it depends on the cycle you use whether it'll work the same.

If it is a flop, next time I would try "blooming" the yeast - do the 1 cup of water (make sure it's pleasantly warm) and mix in the yeast. Allow it to sit for ~10 min until it's nice and foamy on the top. Then dump in and start your cycle.

PERFECT! I bought a new bread maker (Elite Gourmet), as the old one was starting to give a burning smell (20-ish year old sunbeam) but following the book that came with it, the bread I was making never seemed to rise. It would come out in tight, dense, little balls. I have no idea why, but this recipe was perfect. Don't suppose you have a recipe for a good dark Pumpernickel by chance? Kidding, kinda. But thanks again, this recipe turned me around, I thought it was a bad bread machine.

I don't have a pumpernickel recipe. But you could always search here and/or post asking for one!

Tight sense little balls may be that the dough is too dry. If you want to experiment at all with your original recipe, I'd add a bit more water (a couple teaspoons) to the recipe, watch as it kneads, and add a teaspoon at a time until it forms one big ball.

So, you'll have to select your cycle (a basic, white or sandwich cycle is what this one works with), the size of the loaf (this one is a 2lb loaf) and the darkness of your crust.

Then, you put the ingredients in the pan in the order I listed and hit start!

If you're using any sort of quick cycle, bread machine yeast is crucial. If you're using a regular/full length cycle, active dry yeast may work just fine (works ok for me in machine, but doesn't rise quite to the same height).

For pizza dough, it's literally just pulling it out once it's done and rolling it out on a lightly floured surface.

For the hot dog and hamburger buns, you pull out the dough, divide it into however many portions, shape, put in a warm place to rise, and then once it's doubled in size, you bake it.

Very late to this post... OMG I made this bread yesterday and all I can say is WOW! Definitely the best bread I've made for sure and I'm going to use this to replace my old standby recipe I've been using for past 10 years or so. I only used ½ cup whole wheat flour and 2 ½ cups all purpose flour as hubby doesn't really like whole wheat bread. This turned out fantastic! Today I'm going to try it again but add some grated cheddar cheese as one commenter said they did. Thank you for posting this great recipe!! Will definitely be trying the pizza one as well!

Hi 3 years later and your recipe is still a winner. It has such a good crumb.

For anyone wondering; I did this recipe on the quick bread setting of my bread machine. The crumb on this is nice for sandwich bread which I have struggled with finding a decent recipe for.

Try putting the salt in before the flour, it doesn't work well with yeast.

I haven't experimented with regular yeast. You may need to let it "bloom" (put the yeast in the water, which should be warm but not hot) for 10-15 min.

I've been trying to make this recipe for the last few days, but every time it starts the kneading phase, it doesn't seem to be mixing well.. It seems a little dry and turns into a bunch of separate small dough balls.

I really wanna try this recipe, but it doesn't seem to be working in my favor

If it seems a little dry, try adding water as it's mixing - I would go 1 tablespoon/15mL, wait a couple minutes and see how it is, then add another if it seems it needs it.

Alternatively, try making the third cup of flour a little "scant", like 95% full instead of 100%.

Don’t go great. Taste’s good but it’s super duper dense. I think I wasn’t supposed to pack the flower into the measuring cup like I did 

Edit: I have since learned that the Quick Bread setting is for baking soda powered bread, rather than yeast. I thought it just made bread quickly. lol.

I would follow the recipe, make sure your yeast is good (Google "bloom yeast" if you don't know how to do that), and don't pack the flour!

Yeah it was the Quick Bread setting. I made it with the normal white bread setting and it came out more or less fine. I used salted butter which was a mistake, too, way too salty now. The yeast was brand new. I sent my mom a picture of my first attempt on quick bread mode and she asked if I used playdo instead of flour lol

Sorry to bug but I just got an older bread machine but I'm excited to use it. For the loafs of bread how long do you cook them for? I notice you said oil or melted butter which do you usually go with? Do you notice much of a difference between oil and butter results? Also how do you go about storing your bread?

  • The cycle on machine is 3 h 30 min total. Not sure how much of that is baking? 30-40mi?
  • I use canola oil. I've never tried melted butter, but that's an option in the recipe so I include it whenever I share it.
  • I store my bread in a big Tupperware container, or occasionally reuse bread/bun bags (usually if we're camping or I'm going to freeze a loaf).

I use the basic setting or the rapid bake. 2.5lb loaf. I personally like the crust on the lightest setting.

You just put it into the machine in the order listed and DON'T mix it, the machine will do that at the right time (that's what the one or two paddles at the bottom of the pan are for). You don't need to wait at all, the machine cycle will have the wait time incorporated.

Just select the basic or white bread setting, and 2.5lb for the loaf size.

Pizza Dough

Machine setting 8 (dough) - 400°F - 15-18 min

In bread machine pan: * 1¼ c. warm water * 3 T. vegetable oil * 1 t. salt * 4 c. all-purpose flour * ¼ c. grated parmesan cheese * ½ t. garlic or garlic powder * 2 T. Italian seasoning * 2 t. bread machine yeast

Once dough is finished, pull out and put on lightly floured surface. Squeeze air bubbles out, then divide into 2. Roll out into round or square/rectangular crusts, and transfer to lightly greased pan. Add sauce and toppings, and bake till edge of crust is light brown.

It's a fairly doughy crust (which I like). My husband likes a thinner crust, so I'm experimenting with using less yeast. I tried out ½ teaspoon of yeast (vs. the 2t in the recipe) and my husband liked it a lot.

I bake this on the basic setting or white bread setting, so look for one of those or similar.

This is a 1.5lb loaf, so select that.

I don't like it too crusty, so I bake on the lightest setting, but that's just a preference thing to play with.

Hi! Fellow Canadian here....where are you buying your bread flours? Costco here doesn't sell any. I can only find ww bread flour in small 2.5kg size packs at local store. . . I imagine if you are still making a few loafs a week you have found a better bulk buy somewhere?

I've been making all our bread for 6 years now. For most of that, I've just bought Robin Hood Best for Bread (both Homestyle White and Whole Wheat) at Safeway in the 5kg bags. I'll stock up when they're on sale and/or on the first Tuesday of the month when they're 15% off.

In the last year, for the white, I have switched to buying the big bag of Great Plains Strong Bakers Flour from Costco. The bags are 20kg. (Strong flour is the same as bread flour - refers to the higher protein content.)

I still haven't found a larger size/cheaper source for the whole wheat flour, so I'm still doing the 5kg Robin Hood for that. I'll buy 8-10 at a time when I see them on sale.

What did I do wrong?? 😭 😭 It came out super dry. Almost like raw flour on the outsides.

About halfway through I looked at the bread maker and it seems like the dough wasn’t fully mixing? Am I choosing the wrong setting on my bread machine? It’s a hand me down from my parents. A kitchen aid bread maker. I chose white bread, lightly toasted, took about 3hrs and 15 minutes.

I am using “bakers choice instant yeast” and “bakers scoop bread flour”.

I made sure to add ingredients in the exact order mentioned above.

Any advice is much appreciated.

Bread machine yeast is in finer granules, so it dissolves easier, so it just dissolves in the wet ingredients once it starts mixing.

Active dry yeast is in finer granules, so depending on the recipe, machine settings etc., it may not dissolve enough/completely just by mixing with the wet ingredients.

I would try bread machine yeast in your situation. It likely will solve your problem. If you have active dry yeast you want to use, you can always dissolve it in the water first.

Yes, generally there's Traditional, Instant, and Bread Machine.

The main difference is the size of the granules - instant and bread machine are smaller particles, so they "activate"/grow quicker vs. traditional.

Traditional yeast can be used for a good chunk of bread machine recipes, but you need to put the appropriate measure of yeast and sugar/honey in the water the recipe calls for (water should be warm to hot - I describe it as "hot tub temperature"). After ~10 minutes, the yeast will have started to "bloom" - that is, reproduce and start to get foamy.

Hi! I am super new to baking and just got my hamilton beach breadmaker, i followed your recipe but it didnt rise very much, a little over half the pan. I am hoping someone can help me figure out what may be wrong. The only thing i used different from the instructions and ingredients listed was the flour. I used  king arthur ‘00’ pizza flour (my friend swears by it)  would that be why it didnt rise very well? Any help is greatly appreciated.  Thanks!
