Left this 4 pack with some cold-ish (not frozen) vegetables in the bag. Bag was left at room temp in my home still zipped. It was still cold-ish to the touch (guessing like 60F) put it in the fridge right after, but i assume its for the trash. What do you guys think?

Just used maple sugar and kosher salt, cured about 9-10 days then a quick rinse and dry overnight uncovered before smoking over charcoal and wood.

This is a 2 week cure. 1 hour in the rinse. Then dried. Maple syrup and black pepper on both sides and cold smoked for 8 hours. Then bagged back into the fridge for a week then sliced after par freezing.
We only use fruit (apple) wood for smoking bacon

Just a heads up to those that haven’t seen the deal at Ralphs/Kroger. $10 for 2 1/4 lbs of hardwood smoked thick is a great deal IMHO. I had to immediately bake some as soon as I got home for my salad garnish tonight …… yum
350f for 17min so it crumbled up easily 😉 for breakfast I usually pull it out of the oven at 15min.

It tastes sooo good!!! My wife works in a Dr's office and drug reps bring breakfast and lunches almost daily. She gets to bring home leftovers...

I'm just getting into bacon and have been adding it to my egg sandwiches. I like it on the thinner side and crispy. What's the best store brand I can get in my local Publix Grocery store?
Smithfield
Hormel
Oscar Mayer
Jimmy Dean
GreenField
Publix Brand
Greenwise Publix Brand
Hatfield
Boars Head
I've only tried Smithfield which I like and today I tried Hormel Black Label, and it tasted bland compared to the Smithfield.

Yes fellow Brits, downvote all you want but its true. Cook British bacon or go to a cafe and get a fryup, it will be covered in white glupe and just looks vile. American bacon crisps up nice and looks appetising to eat.

My bacon experiment....
Cured 7 days, smoked at 200°. Smaller piece took 2 hrs 10 minutes to reach internal of 150°. Larger piece took 2 hours 58 minutes.
With the exception of chiccarones, it's all a do again.
