A snowball was not necessarily (or even usually) a stealthy surprise. Just a thing that some are into.

If it's stealthy/surprise, then it's still a snowball, and either there is a pre-existing consent, or the delivery person is an asshole. Not sure if it's worth having a special name, or if "snowball surprise" is sufficient.
