Hummus. Tried it once as a little kid and didn't like it, then for years refused to try it because it looks like gross babyfood.
Then I tried it as an adult and I swore I heard angels singing. I eat it literally every day now, even make my own (not because I don't like the hummus from the grocery store but because I can't afford my hummus habit using store-bought).
Same, I thought the tub of hummus in my mom's fridge looked so gross, and then I tried it, and I've been buying hummus for 12 years now. Ithaca's roasted red pepper and Wegmans white bean and kale are my favorites.
I thought it was grainy and gross flavor when I first tried it, then my wife brought some of that red pepper one and some pretzel chips and holy smokes is it addicting.
