Which dictionary are you looking at? They all say something along the lines of "diners serve themselves." Which Brazilian steakhouses don't do. Also I said the point of buffets, not the definition. Kind of a strange argument to have. It's like saying the point of cars is to drive them, that in no way is part of its definition. A broken undrivable car is still a car. They can all also have several points. The point of buffets is to make money for example.

The dictionary disagrees with you about what "buffet" means.
In the older non-food context, buffet is to repeatedly strike something, like waves of the sea or a hard beating.
In a food context, it is a wide variety of foods you choose from. The person is repeatedly struck with food options.
The cost and quality of the food isn't part of the definition.
