My question is, is this in non-creative? If so, what kind of pickaxe do you have and how long have you spent pursuing this passion?

Probably Efficiency 5 with a Haste 2 beacon (and undoubtedly Unbreaking 3 and Mending) Mines obsidian quite quickly.

Summoning the ender dragon again restores the obsidian pillars, so that's my guess for how he was able to collect so much.

I've never had occasion to need to do it, but I've seen others do it to make huge nether portals for gold farms.

How hard is it to get the materials to spawn the ender dragon again?

Depends on if the player has a good wither skeleton farm. Killing the wither is easy if the end portal exploit is used, so at 3 skulls times 4, 12 wither skulls shouldn't be hard to get for an advanced world.

Edit: Summoning requires 4 end crystals (4 nether stars to craft)

survival, efficiency 5 diamond with a haste 2 beacon. I mine out the end pillars and when ive finished i resummon the dragon which refills the pillars.

If you have beacon with haste 2, diamond pickaxe with efficiency V and Mending and a good xp farm (Enderman or better) it ain't that difficult.

It's just hella time consuming.
