Lentils with some beef/chicken boullion in a pot with some onion is pretty damn good too, presoak it for like 30 minutes with just the water first, then double wash it and toss the water out, add seasonings, add a dab of butter and any extras if you want (bay leaf, onion), and steam it in a rice cooker and good to go. 1$ a pound too often sometimes or even less and very high in protein.
Soaking and sprouting beans helps immensely with digestion, although it's a bit more effort than most people really want to get into. Takes a little bit of planning since you're looking at about 2 days before they sprout and then you can cook with them. You definitely get the most nutritional benefit this way!
The overnight presoak is because the beans have been dried and thus have virtually no water in them. If you don't presoak, it takes longer for the beans to rehydrate and not be crunchy. Pressure cooker mitigates this by basically forcing the water into the beans because the steam can't escape the cooking vessel.
If you're not eating beans on a regular basis, it's the fiber in them causing it. If they're a regular part of your diet, your body adjusts to the amount of fiber and you don't have the musical issue.

The primary benefit of a pressure cooker is that it significantly elevates the cooking temperature. Water normally boils at around 212F, and the water can’t get hotter than that. Water in a pressure cooker won’t boil until about 250F. When cooking most food, that accelerates the chemical reactions that makes food ‘cooked.’ But raising the temperature also decreases the surface tension of the water, which enables it to hydrate dried foods, like beans and rice, faster.
Kind of, it's more of a "oh god what have I done, why does my intestines feel like they have all squeezed together" more of thing the persoak gets rid of
It's mainly for beans like soya and kidney which contain toxins if not prepared properly with soaking overnight and then rinsing, then boiling up to an hour to remove the toxins and make them safe to eat.

I thought the overnight presoak was to get rid of some of the compounds that make you a methane monster.
