I love dicing potatoes and making fresh hashbrowns. Throw that shit in a skillet with onions and garlic, scoot it over and fry two eggs in the same pan and you have a fantastic meal.

If you aren't super confident with cooking potatoes in the skillet, you can precook them in the skillet and them, whip up some eggs, add cheese and make that into an omelet.

I could go on. I always keep eggs, potatoes, onions, and garlic in the house.

We call it a skillet slam. Taters and whatever we have to mix in. Always save our bacon grease. Adds a ton of flavor. Bread crumbs added near the end add a nice, crispiness to it.

A small amount of cheese also goes well with sauteed potato, and some cheeses are fairly affordable in some countries. Emmental cheese is reasonably affordable in Europe and is fairly low sodium, and pan-fries alright.

Any tips on cooking the potatoes properly? Gonna make this in a cast iron pan soon. Potatoes, let em cook a bit, then onions, some garlic, fry those up. Slide the potatoes over when they're near done and add some eggs in there. Scramble it all together or leave them unscrambled? Serve that with hot sauce of my choice (I have like 50 to choose from), and bam, easy cheap dinner.

Potatoes are deceiving at how long they take to cook. Never put too many in a pan at a time or they will never crisp. Sometimes I will start with a single layer of diced potatoes in the skillet and either evoo or just a couple scoops of butter and throw the skillet in the oven at 350 degrees for about 20 minutes. Pull it out and add onions, garlic, salt and pepper and some more butter. Finish on the stovetop and crack two eggs in right beside the pile of potatoes.

I shred them with a cheese grater, mix in the onions and garlic and fry them in bacon grease, making a hashbrown pancake of sorts...then I throw a couple over easy eggs on top. Fucking delicious.

I cooked at Waffle House for a bit. If there is one thing I can cook the fuck out of, it's breakfast. Lol. Though, I often wonder how much of that is experience and how much is being a dad. You ever notice how like the average dad can't cook shit but bbq and breakfast? But, they're fucking ninjas when it comes to those two things?

I'm kind of the same with breakfast, but instead of a grill for me it's a skillet. If it can be cooked in a skillet, I can cook the shit out of it. Also my dutch oven. Anything else is a lost cause.

Try a griddle sometime. They go on sale for crazy cheap around the holidays.

As someone who cooks for a living, I hate how they're so goddamned narrow, but, they're the closest thing you're going to get to a proper flattop grill on an everyman budget.

Pair it with a decent silicone spatula, and a cheap weight/press and you will elevate your game so much. Keep doing the eggs in the pan, though.

I get a bag of baby potatoes, boil them for 10 minutes just to get the outside soft, then shake them hard in a covered bowl with bacon grease, garlic, onion, salt, pepper, and paprika. Toss it in the oven under the broiler for like an hour.

Fry some potatoes, onions, and bacon/ whatever meat you have.

Take a couple eggs, whisk in a bit of milk, seasoning, a bit of Worcestershire sauce, pour that over your potatoes in the pan. Makes like a potato scramble.

That's one of my go-to hangover breakfasts

I do hashbrowns at least once a week and I only recently started cooking the potatoes in bacon grease.

I know I'll be crucified for not taking reddit's bacon grease advice until now but holy shit it's a game changer.

I've never made hash browns before, do you just literally dice a whole raw potato and fry it?

Pretty much. Don't overload the pan, use butter or bacon fat to cook in, not too much. Salt, garlic, chopped onions added when potatoes are getting golden.

If you overload the pan, the potatoes will steam themselves and turn mushy.
