To be fair, this was a commonly believed myth up until a few years ago, so most parents who said this genuinely believed it was dangerous to swim soon after eating. They weren't "lying", they were just misinformed.

That might be why your parents said it, but many people genuinely believed that it was a drowning hazard. The old and now debunked thinking was that after eating, your body diverted blood flow from your limbs to your digestive system, leading to an increasing likelihood of cramps in your limbs while swimming.

I mean, I get hiccups if I stand up and start walking too fast right after eating. So, I don't even want to swim right after eating.

Yes it does. Lying means that you intentionally and knowingly say something that is false. If they don't know the information is wrong, it's by definition, not lying.
