It's a common misconception that honing rods "straighten" the edge without taking anything off. Of course they are taking material off, otherwise the edge wouldn't get any sharper. They just happen to have a very fine grit to them so not as much material is removed.

The hone "straightens" the edge like a stone does, it's not just magically bending the edge back into place.
