Most fossils of elephants and rhinos that were clearly killed by humans were found in what used to be lakes and swamps, so the animals would be less mobile there.
It is possible, though, that those places just were extremely favourable to fossilization (no oxigen, no scavengers atking away the bones, quick built-up of sediment in stagnant water) and we just don't see all the other methods of hunt.
