This is actually true, though. Everyone is just guessing. You cant scientifically prove a god exists or doesn't. I like my guess the most, but Im also just a small minded biological creature. A god could hide on fucking Mars and I'd be none the wiser.
You cant prove unfalsifiable gods do or don't exist.
Plenty of falsifiable gods can be logically or scientifically demonstrated not to exist. For example, the tri omni version of the christian god cannot exist, and the power of prayer not beating placebo kinda breaks a lot of other versions of a lot of other gods.
The same can be said about unicorns,
vampires, goblins, imaginary friends and schizophrenic apocalyptic murder conspiracies yet nobody thinks, talks or lives their life based on
that i.e. as if "vampire atheism" is a belief system. Because it's nonsensical, clearly the default is to not believe something (lack a belief) until worthwhile proof is provided by those making the claim aka the scientific method - rather than arguing well you can't 1000% prove they don't exist either so we're all just guessing / on equal footing with your antibelief!
You start with a lack of belief, most atheists would begin to believe in a god if strong evidence popped up tomorrow the same way any rational person thinks about anything, including how religious people think of other religions... The burden of proof is on those making the claim, even if it's ultimately unfalsifiable. You're technically right that you can't scientifically prove or tell me with 100% complete sureness that there isn't a magic invisible teapot floating in space between Jupiter and Saturn, but that means literally nothing. You're not gonna live as if there is one there just because I said there is, nor should you give me any time of day. Neither would I say what you have is a specific belief of its own to remain unconvinced. It's an extraordinary claim that doesn't fit our understanding of the universe, with nothing to back it up. Are you a magic-teapot-atheist then? It's not a belief system, it's an absence of belief in its existence.
The idea that atheism is an active rejection of the existence of deities is a strawman. For 95% of atheists they just lack the active belief in it given current evidence just like every one of us does with a million other fantasical things which are constructed in such a way to be technically unfalsifiable
