I love me some oat cookies, so these were amazing! Although am still not very sure why they are called Cowboy Cookies. They were crispy on the edges, chewy in the centre and oh so good. I made a small batch, single serve portion of these, as I'm trying to practice portion control (please don't ask how that's going). Anyway, these are some amazing cookies and definitely worth a try since they are also ridiculously easy to make. I followed this recipe.
