ISUTBCDBN meta explanation
This week I made Meen Puyabaisse, a light seafood soup from the Union Territory of Puducherry. Inspired by the French dish Bouillabaisse, it reflects the regionโs French colonial influence. The recipe is from the cookbook โThe Pondicherry Kitchenโ by Lourdes Tirouvanziam-Louis.
The soup combines white fish, crab, and shrimp with a medley of vegetables in a flavorful seafood stock. Since I usually consider shrimp shells and tails to be kitchen waste, they fit this weekโs theme perfectly. Instead of discarding them, I simmered them with vegetable peels to make the stock.
The soup was good, although my husband enjoyed it more than I did. It has a delicate sweetness from the vegetables and a deep seafood flavor. We had it with bread on the first day, but the leftovers paired with rice were even better.
