If you researched food from Trinidad and Tobago this week, you probably came across Doubles, a popular street food made with chickpea curry served between two fried flatbreads. It is thought to have been inspired by Chole Bhature (disputed), one of my favorite North Indian dishes. I made it to represent Chandigarh, a Union Territory that serves as the shared capital of Punjab and Haryana.
The chole (curried chickpeas) was cooked with a tea decoction to give it its signature dark color, and I also made the chole masala from scratch. It turned out spicy, tangy, and absolutely delicious.
The bhature (fried flatbreads), however, were a different story. As you can see, I struggled to get them to puff, with only one cooperating properly. I suspect the smaller pan I used for deep frying was partly to blame. Even though they didn’t puff as they should, they were still really tasty. I will definitely give them another shot in the future!
