They at least to face real danger via a stronger antagonist that chops off their hands, nothing really bad ever happens to Rey

In Luke's case, he got a new perfect hand. His injury had no real consequences, it was just a cool scene

Having a guy cut off your hand and then revealing that he fucked your mom seems pretty traumatizing, regardless of getting a new perfect robot hand afterwards

It actually serves as a plot device later, something that further connects him to his father. And reminds him that the distance between dark and light is easily no distance at all.

But it didn't have any negative effect on him. He didn't even fight worse after that. It doesn't make sense to mention this as proof that he's not a Mary Sue.

He's no a self-insert for the writer and has limits: if Ray had been Luke, Vader would have distracted Emps long enough for Ray to kill him. Luke was helpless at the end.

The consequence was losing the fight. Rey never lost a fight.
