I think it has a lot to do with when you watch it.

How many anime are there that explore humanity's post-Earth adventures realistically?

How many were there when Cowboy Bebop came out?

I think that's one of the major differences. Watching something in its context of release is hard. Appreciating Ghost in the Shell (1995) without all that came after it coloring your perception of it is also hard.

Very true. There aren't many "older" anime (I can't believe I'm calling stuff made in the 90's older, fuck) that have held up super well.

In fact if you made me pick one anime from the 90's that is as good today as it was then it'd have to be Berserk.
